Crab stir-fried in its own roe
![]() You will need: 6 or so Blue crabs (make sure at least half are female) 2 Tbs black pepper sauce (substitute oyster sauce or hoisin sauce) 1/2 med. onion sliced 4-6 green onions cut into long pieces 4-6 cloves garlic (bruised to release flavor) 1 jalapeno (remove seeds for less heat) sliced 2 Tbs fried sliced shallots 2 Tbs fried garlic bits *one egg (optional) 1/2 Cup mirin (which is sweet rice wine or dry cooking sherry) I've only used live crabs for this recipe I don't know what you'll get with the frozen stuff. Let crabs sit in fresh water for at least 1 hr so they can purge impurities. Rinse. Remove large claws. Remove lower, under tail section and break crabs open from back end. Using a large knife split in half. Remove spongey "gills". For those who are not used to taking crabs apart just use a large cleaver and split crabs in half with top shell on. Rinse, scrubing the outside and legs well. Be careful while cleaning to keep as much roe as possible. Heat large wok or pan on high and add a little oil. Add onions, green onions, garlic cloves and jalapenos. Cook until soften and set aside. Add a little more oil and all the crab parts to pan. Stir evenly and add mirin. Cover and let steam for 6-8 mins stirring occasionally. Then add pepper sauce and stir evenly, at this point if you want to add an egg for a creamy texture you should break the egg(although I'm not a fan of this and don't use it in making this myself) into the pan and stir evenly. Turn off heat but and add remaining ingredients and cover for another 5 mins or so letting it all cook down a little. Uncover and stir well. I tried your Thai Green Papaya Salad glowhappy, it was very refreshing.
I had most of the ingredients at home, I just needed the green papaya and some Thai basil. I make a batch of Tamarind paste from a compressed block of tamarind, simmered with some water to soften it up, then pushed through a sieve. I use what I need and freeze small amounts for other recipes. I'm only cooking for 2 and a large papaya looks like it would feed a family of 10. My Asian grocer had some pre-shredded, mixed with carrot, so I bought that instead. The grocer recommended a Japanese mandolin if I wanted to shred my own. I halved your recipe. I started with one cup of simple syrup. 1/4 cup quantities became 2 tbsp...etc. The Vietnamese sweet & sour sauce turned out great. It was a bit sweet at first, so I adjusted the taste by adding more lime juice plus more chili paste. The shredded papaya can take quite a beating with the mortar and pestle. Very little juice was released but it absorbed the sweat and sour dressing and gave it some taste. I didn't add any shrimp or jerky this time. Maybe next time. Thanks for the recipe, it is easier to make than some others I've seen for green papaya salad. |

And I should have added that the papaya yields little juice unless you are using a slightly ripe papaya. Ricotta Gnocchi
Ingredients Gnocchi: 1 (8 ounce) container ricotta cheese 2 eggs 1/2 cup freshly grated Parmesan cheese 1 teaspoon salt 1 teaspoon pepper 1 teaspoon garlic powder 1 cup all-purpose flour, or as needed Sauce: 3 tablespoons olive oil 1 tablespoon minced garlic 1 (15.5 ounce) can diced tomatoes 1 dash crushed red pepper flakes (optional) 6 basil leaves, finely shredded Salt and pepper to taste 8 ounces fresh mozzarella cheese, cut into small chunks Directions Stir together the ricotta cheese, eggs, Parmesan Cheese, salt, pepper, and garlic powder in a large bowl until evenly combined. Mix in 1 cup of flour. Add additional flour if needed to form a soft dough. Divide the dough into 3 or 4 pieces, and roll into 1/2-inch-thick ropes on a floured surface. Cut each rope into 1-inch pieces, and place on a lightly floured baking sheet. Place in the refrigerator until ready to use. Heat olive oil in a saucepan over medium heat. Stir in garlic, and cook until softened and fragrant, about 1 minute. Pour in diced tomatoes and red pepper flakes; bring to a simmer over medium-high heat, and cook for 10 minutes. Stir in shredded basil and season to taste with salt and pepper. While sauce is simmering, bring a large pot of lightly salted water to a boil over high heat. Boil the gnocchi until they float to the surface, 1 to 2 minutes, then drain. To assemble the dish, stir the cubed mozzarella cheese into the sauce and allow the heat of the sauce to soften, but not melt the cheese. Place gnocchi into a serving bowl, and spoon sauce overtop. |

Corn Salad
This is ridiculously easy and also pretty good! It's a combination of about four recipes I found while looking for a corn salad recipe I had all the ingredients for. I took out ingredients I don't like, and added ingredients I did, and this is what I came up with. I'm not claiming it's original (someone else has probably come up with the same combination), but I haven't seen it anyplace. 1 bag frozen corn 1 med. ripe tomato, chopped 1/2 to 3/4 finely diced red onion 2 - 4 tablespoons your favorite Italian dressing. I used Tuscan House Italian by Kraft. Seasoning to taste. I used Tony Chachere's Cajun seasoning. Empty corn into large bowl (one with a lid). Add tomato and onion. Toss with Italian dressing and seasoning. Put the lid on the bowl and put it in the fridge overnight to allow corn kernels to thaw and flavors to meld. You can add more or less Italian dressing as you like - I like just a hint of it in mine. |
