I was in the mood to experiment, so I decided to steep some Keemun extra long (ten minutes) to see how it turned out. It's really rich without tasting oversteeped at all. Through some combination of terroir and 5000 years of selection, there must be almost no bitter tannins in the tea.

The quality difference was actually what got me thinking. The Keemun that I've been drinking is from a can that I found in a little Asian grocery ("Qimen Black Tea"). It's delicious, but I can't find more (I should have bought two
). The Harney & Sons "English Breakfast" is Keemun and has the right flavors, but it's also bitter. Not terribly, but if it steeps too long, it's distracting.Since I'd never noticed that with the other stuff, I decided to seriously oversteep it and see what happened. So now I wonder what the difference is. Is the dirt different a few miles up the road? Are the trees from a different lineage? Does one get more water when it rains? |

The difference can be many things I doubt the English Breakfast is pure Keemun. Most EBs have a healthy amount of Assam or Ceylon or both. And both can easily become bitter when over-steeped.
ETA: I see they claim it's 100% Keemun. Whatever. If it doesn't handle long steeping, find another. ![]() Next is leave size/quality -- most inexpensive EB tea bags are made of dust and small broken leaves. And again, who knows what else. Good Keemun will be small, but mostly whole, leaves. Finally, it makes a huge difference when the leaves are picked. While Keemuns aren't rated as first flush, second flush, etc. there is still a definite difference as the season progresses. Personally, today, I've been drinking Murchie's Keemun Extra Superior, a good Keemun, though not a Hao Ya 'A' grade (or price!) Last edited by CRussel; 05-12-2017 at 08:07 PM. |
