I'm semi-fortunate in that our house is paid for, the wife's truck was bought with cash, the loan I co-signed for someone who will remain nameless who made only a few payments (I made the rest) is now paid off, and as of this payday our car will be paid off. The bad news is some pretty high balances on some of my credit cards, but after I send the final car payment in, they are directly in my sights.

Listening to the thunder. My bedroom is still dry (runs around the room to knock on all the wood) so I'm happy. I love thunder, it's a shame I live in the inner city and can't really watch it. My grandparents used to have a bit of land with a holiday house and a boat house. Each summer they stayed in the apartement above the boat house and we stayed in the "big" house (my father's family wasn't interested). There was a great view over the water and thunder always had trouble crossing the lake so it lasted for a long time. I love running backwards and forward on the top floor to follow the "storm".

Still on a quest for the perfect biscuit. I tried whole wheat biscuits tonight. I was afraid they would be hockey pucks, but they are nice and light! The recipe called for more milk than I use with white flour and the dough was very sticky but I took a leap of faith and followed it. This may become my go-to biscuit.

Good plan and I know you can do it. Ten years ago I made a decision that I would not use my credit card to purchase anything that I didn't have cash at hand for. If I don't have the cash, I don't purchase. It was hard to do at first, but now it is just a way of life. There is always another sale. I only have house payments and I am trying to get that paid down. Unfortunately, I bought a new house 10 years ago, so there is a good 20 years left.

- are those better than the sweet biscuits?

When my sister and I went to the Teabar for the first time we were amazed that every shop out of 5 or so is a "coffee shop" on that street. If you're looking for "tea" in Utrecht I know of 4 within a 2 minute walk from our house .

Well, they are as good as the sweet biscuits, just different since I didn't sweeten them at all. I used this recipe, pretty much with no changes:

I kneaded the dough very minimally to keep them from being tough. As I mentioned, it was pretty sticky, but I just made sure my hands were floured as well as my countertop and biscuit cutter. And remember when cutting them to press straight down, don't twist. (You can use a drinking glass) .

We started off with a 30 year loan, then a few years into it when rates were lower we refinanced to a 15 year loan. When we got close to the end of that, my wife used her savings to pay off the balance. I tell her I married her for her money. She says she married me for mine and didn't realize until it was too late that I had none.

It took a while to sink in.

Today I had to laugh at two American tourists. They came in asking where they could find The Dome. I answered them that there wasn't a dome in Utrecht. They took out their guide, telling me there is one mentioned in their guide although it was misspelt as Dom. They clearly hadn't read the guide, the Dom (or Dom Tower) is the tower of the biggest church in Utrecht (in 1674 a tornado swept away the bit between the church proper and the tower). There was a big picture of the tower right next to the text about it!

We call them scones and what we call biscuits you call cookies. How did these subtle differences arise?
