More ram obviously does have benefits, but it isn't a simple equation of more ram = better, hardware makers of mobile devices always have to consider the costs to battery life and your examples of faster and smoother operation are only true if a device is actually running out of ram, if a device isn't running out then adding more won't make it any faster or smoother.
