You could use Instapaper to tag the articles you'd like to read and send them off to your Kindle. I've used it for Wikipedia and other sites and found that it works really well.

I have a similar interest, but to view Wiki topics on an eReader. I've been experimenting with a Sony (700 vs. 505) at the local Borders. I've been very impressed at the readability of Wiki Books (PDF) that I created. I created an account of Wikipedia then searched on a topic of interest. I used the Wiki feature to generate a 'book' of selected topics.
The resulting PDF files are very readable on the Sony 700 'as is'. I haven't learned yet what's different about their PDF's but the images are visible, text is reformatted to view on the eReader screen (is that 'reflow') and even very scientific / technical articles (such as 'Maxwell's equations') viewed well. So, create a Wiki PDF book and try converting it for the Kindle. Maybe someday in the future, the Wiki book service will generate an ePub format specifically formated for eReaders... Good Luck!
