You can…. But it takes some creative use of JS. I’m pretty sure RbnJrg posted an example or two on here demonstrating the technique. At the time it was of limited use due to ePub 3 requirement, but would be much more widely supported now.

The thing to do is use the code posted and make more lines then will fit on your screen and you'll see what happens.

If the height of the block is bigger than the height of the viewport, the block can't be showed totally. That is a problem very common with "real tables" under ADE Legacy. For that reason the best practice is to split tables (or pseudo tables) in subtables; of that way you not only will avoid the issue you name but also will avoid fragmentations.

However, under epub3, it's possible with js to detect the height of the viewport, the height of the table and to adjust the table font-size so the table never will be higher than the viewport. But is by far easier, instead of using js for this case, to split the table in subtables (that also will work under epub2).
