I very much like to do without such apps - nobody forces me to update.
And I don't use apps that depend on external connections and therefore have to be updated when such changes are made.

It happens. I've had it happen with iOS when the device no longer gets a new version and some apps get updated such that they no longer run on the version of iOS installed. I can see that happening with Android just the same. Android 10 is a lot more future proof then 8.1. Just like iOS 13 is more future proof then iOS 11.

It's far worse with iOS. Apple blocks older versions entirely.
Plenty of Android apps still install on Android 4.x
I was also able to install archive site APKs on an Android 2.x last year, there is no way to install iOS other than a supported iOS from the store. Though Apple things do get iOS upgrades for a while. Most Android phones and tablets don't, but mostly it doesn't matter.
My Lenovo Tablet is not even a year and a half old and is Android 8.x, same version as on the Boyue Likebook Mars I bought recently, which was originally selling with 6.x

Future proof is a bit of a myth. Generally you have to buy new hardware.

By the time something like this happens with Android - maybe in 10 to 15 years - the devices now in use have long been discarded.
My Sony PRS-T2 (Android 2.1) still works with all applications installed at the time.

If an update of an app comes out that no longer fits the installed Android version, the update will not be displayed.
