If your settings are not correctly configured, you;ll find changed to the eBook that you may not want and that means you've done the conversion but still have to edit the eBook.

It's a lot easier to edit the eBook. It takes almost no time to do what you are wanting to do.

Most eBooks don't have colors that need to be edited. Besides, it takes very little time to check. Most of the time I see a background color set is for the cover image to make the borders black or white.

Are you really thinking of converting every eBook in case there are some colors in it?

Even if color eInk comes to Kobo/Kindle in the next few years, I wonder what impact it will have on resolution, refresh rate, battery life, etc.

It can be done with little to no impact to resolution and no impact to refresh or battery life.
Either the colours are very washed out pastel shades and it's a little greyer without the front light, or if the colour is good, then you have half the resolution at best (both directions, or normal one way and 1/3 the other) and it's very dim unless in bright sunlight or high power front light. That's the case if it's eink.
There are two other static cell technoloigies for long battery life, Mirasol and a squeezable cell. Mirasol wasn't great colour and it seems to have died 10 years ago after one product sold by two companies. No-one has made a viable commercial screen using the cells that the coloured ink is squeezed in and out of, in any case it's likely quite dim.
So that leaves eink with either a full colour filter (ancient now) or the partial filter. Or OLED or LCD. Unless Qualcomm sells Mirasol to Samsung or someone Chinese.

At one point, I seem to remember reading that Apple had purchased Qualcomm's facility on Longtan, Taiwan. Otherwise, it was in 2012(??) that Qualcomm lost ~$300 million US on Mirasol and in 2013 announced Mirasol was being dropped.

I also seem to remember that one test of a Mirasol ereader playing a 60Hz video chewed up the battery with enthusiasm while leaving the viewer complaining about the washed out colours.

Nonsense. Colored backgrounds and colored text add nothing to the readability of a book and frequently make it less readable, even on color screens. Half the time I move a webpage to my ebook it's exactly because the author's poor taste in design make the page nearly unreadable in a web browser and I *want* to remove all their glitzy decorations, ugly colors, random font size changes, etc., to say nothing about animated adds and javascript cpu eaters.

If I need color in a document, it's typically to look at pictures, or read diagrams with color lines, etc., and removing colors via css styles should have no effect on that.

Not so. For some people who are dyslexic, they can read colored text better. I used to know someone who was able to read better if the text was green on a black background.

Regarding battery life, I'd be happy to get a chunky ereader that takes one or two AA batteries. This way I can use rechargeables, and when the rechargeables' don't charge well anymore, I replace them with other rechargeables.

Not disagreeing with this. However, web page designers rarely seem to pick colors that help. Like light grey text on any color... or poor contrast text on a busy background image. Usually the colors they pick are much worse than the default colors.

And even if that wasn't the case, if color helps, you should change your default colors.

We've come a long way from the original RocketBook with its two chunky non-replacable nicad batteries inside that were about the size of C cells. I don't see us going back, even if AA's are smaller than the old nicads.

Well, they don't _have_ to be non-replacable, but they don't have to be flat either. But the non-replacable flat ones rule anyway. Why? Because that's what the manufacturers are making products with. (The non-replacable ones are probably thinner than the replaceable ones, if you believe the rumors.)

a cynic would say it's in the manufacture's interest to use a non-replaceable battery, and glue it in just to make it even harder for the owner/user to be able to change it for a new one when the need arises.
