On touch devices, when you long press a font you can select it as default/fallback font to use it on all the documents (see attachment). If you click on default that would be propagated to settings.reader.lua as well.

On NT devices you might need to add the setting manually, like on previous posts, but with contents:

["cre_font"] = "Noto Sans",

BTW, poire-z just fixed the issue you faced on the bottom menu, so you should be able to tweak margins from there too.
