The simple way for some folks would be to make an HTML file in Word or some other word processor with a black background and white text, then convert html in Calibre or somesuch. At least I think that's how it'd work out, but I haven't tried. It's a bit frustrating trying to get pdfs like that, since I always use multiple different fonts and custom typesetting.
