The fact that the last one says "with auto-connect fallback" tells us that calibre was alive and running on a machine on the local WiFi network and responded to CC's "are there any calibre instances out there" message. I can't tell from this log whether the 68... address worked, but it is certain that the 192... address would work.
So the days when it failed, both the fixed and fallback IP addresses failed then? The log changes you are showing above don't say that.

Yes, and indirectly the logs do say that. If the auto-connect fallback box is checked (which it is for you) and the log doesn't say "with auto-connect" then no computer answered CC's auto-connect broadcast query. Without an answer to that query the only thing CC could do was try the fixed address, which is the "Server to check".
