Aaaand I will issue an anti-recommendation for Warbreaker, especially if it would be your first exposure to Sanderson. I love his work generally, but every shortcoming he has as a writer is turned up to 11 in that book. It was about 60% plodding exposition with flat, grating characters (and some especially problematic princess heroines), and the magic system, usually Sanderson's strong suit, was arbitrary and kind of silly.

I'm not sure how well any of Sanderson's work would scratch the OP's mythology itch, but there does tend to be a theme of rediscovering, restoring, or building new gods in fallen and/or decadent societies. Most of his stories are an apocalypse in reverse, bringing water to the waste land, but the gods and godlike beings don't tend to get a lot of stage time.
