IMHO Mary Stewart wrote the definitive Arthurian trilogy beginning with The Crystal Cave.

Mentioning Arthurian legend reminds me to suggest Tim Powers' "The Drawing of the Dark." Many of Powers' books are unique historical fantasies but that is one of my favorites. Probably the, um, dark humor.

And historical humor reminds me to suggest Neal Stephenson's 'Baroque Cycle' trilogy, more historical fantasy. Half-cocked Jack became a favorite character for me and Stephenson's sense of humor makes me laugh out loud at times.

I would recommend Steven Eriksons "Malazan book of the fallen" series. The first book is not that innovative plot wise, but the second book is unlike anything in fantasy (maybe with the exclusion of Glen Cook, who I would also recommend).
If you want to read complex and different fantasy, this is a must.
