Just follow the instructions in post #11 above.

You will need to create a list for each device - because each device is containing its own set of books.
  • For "Device to sync this list to" select your specific device. If it doesn't exist yet, switch to the Devices tab and click on the "Add connected device" button once the device is plugged in (one-off exercise for each device to register them with the plugin).
  • Set the list type to be "Autopopulate list from items on the device"
  • Tick "Sync to this device as soon as it is connected"
  • Set "When changing this list" to be "Update column for add or remove"
  • Set "Column to update" to be "tags" or your custom column
  • Specify your value for that particular list/device.
Click ok. Rinse and repeat for each device.

Then when they are next plugged in they will automatically update your tags/column. If while plugged in you manually make changes to the books on the device (eg. removing a book from the device) be sure to do the "Sync now" option to bring the tags/custom column up to date.

Is there some requirement to keep the books on whichever devices after reading them?

Why not just keep books in the central calibre library on your computer, only load books to be read in next few days onto any given device, then after reading them delete them from that device while retaining the "master" copy in the calibre library. I currently have 4 reading devices not counting computers, plan to get more, and see no need to spend time to track what is on what device because by deleting from device after reading, the books on any device at any one time are temporary and ephemeral.
