Very obvious, it's is standard design built into your OS. You want your OS to work in a way your OS doesn't work. Calibre gives you two choices open the file with the editor associated with text files per your OS or use calibre's internal viewer to view the text file. You are looking for a third choice. Kiwidude created the Open With plugin to accommodate folks who wanted a third choice.

@odradek. If you find opening a sub-menu & clicking on the right file format is a little hassle, you could assign a shortcut key to open that format with Open With plugin.
