To be perfectly honest, it turned out on the rarer side of medium-rare.

I just find it easier to call how I cook them medium rare. I tried out "Well rare" for a while but it tended to confuse people.

I think it will be baked salmon, cauliflower rice and some broccoli.

** I added some peppers and onions to the rice. Need to experiment with the best way to cook it though.

You might to look at vegetable rice pilaf recipes. One example is here though I tend to dump the rice and vegetables into a rice cooker before adding the water step and I use a long grain brown rice which increases the cooking time.
