Sidemeat in South Georgia is bacon or salt pork.

I'm not a hunter. I'm not interested in killing animals for sport for one reason.

I think that the meat of feral hogs is probably tough, due to the kinds of things that they eat out in the woods. Maybe with the right kind of preparation, it would be tender enough.

Too, when it comes to feral pigs, the hunter easily can become the hunted. A son of a friend of mine went out with his huntin' dogs to hunt feral pigs one night. One of those pigs tore up one of his big, bad hunting dogs so badly that it cost a small fortune at the veterinarian to get the dog fixed up. If you see a picture of one of the feral pigs, you'll see why they're so dangerous--for one thing, they have some scary tusks.

One quick comment about cornbread, for the benefit of non-Southerners. It is another food that started out as the fare of poor Southerners. Back in the day, many people could not afford wheat to make that kind of bread, and for some reason it wasn't grown in the South (still isn't, I am not sure why--maybe because of the heat?). "Everyone" grew corn, however, and if they didn't they could buy it cheaply at the store. Thus, the popularity of cornbread (I don't know if it originated in the South or not). Cornbread didn't require wheat (and IMHO authentic cornbread never has wheat in it (nor sugar!)).

GtrsRGr8 wheat needs to hibernate in coldness main reason it is not grown in the south. But they do have some wheat that can be grown it just is not popular. We do grow wheat here in western Kentucky and in some parts of Tennessee.

Back in the day a farmer would grow corn during the summer and plan collards, mustard, turnips, etc during the winter months because they greens could handle the cool weather but not the hot summer sun.

A Fancy-Schmancy Paleo Cookbook, with an 80% Off (Digital List) Price.

I rarely post (if I've ever posted) a paleo cookbook, for reasons that I won't get into now. However, this was a must-post, for these reasons: 1) it's a niche paleo cookbook--it's focused on fancy schmancy fare unlike your regular, run of the mill paleo cookbook; 2) it's really big (437 pages); and 3) it's rated 5 stars, over 116 reviews! This is a special paleo cookbook.

Of course, it's also got a big markdown on it--that's the only kind that I ever post.

The Zenbelly Cookbook: An Epicurean's Guide to Paleo Cuisine. Rated 5 stars, from 116 reviews at the present time. Print list price $29.95; digital list(?) price $9.99; Kindle price now $1.99. Victory Belt Publishing, publisher. 437 pages. http://www.amazon.com/Zenbelly-Cookb...+Paleo+Cuisine.

Book Description
The Zenbelly Cookbook bridges the gap between the Paleo template and gourmet cuisine.

With a focus on quality ingredients, technique, and balancing flavors, this book will take the reader on a journey that will leave any feeling of restriction behind. With over 100 real food recipes, "The Zenbelly Cookbook" covers every course and occasion; from simple weeknight meals that can be made for the family in under 30 minutes, to elegant multiple course dinners that will impress any guest. "The Zenbelly Cookbook" will also offer entertainment tips such as: what can be made ahead, shortcuts that don't sacrifice quality, and menu suggestions. The goal of "The Zenbelly Cookbook" is to make incredible, professional quality food accessible to the home cook. Each recipe has a beautiful image of the ingredients laid out, which helps the reader easily see the "before and after". Written with the novice home cook in mind, it includes foolproof instructions. However, the flavor combinations and creativity of the book make it a great choice for the more seasoned cook, as well.

Another Paleo Cookbook, Much Like the Previous One.

Paleo by Season: A Chef's Approach to Paleo Cooking. By Peter Servold. Rated 4 1/2 stars, from 39 reviews at the present moment. Print list price $34.95; digital list(?) price $9.99; Kindle price now $1.99. Victory Belt Publishing, publisher. 304 pages. http://www.amazon.com/Paleo-Season-C...+Paleo+Cooking.

Book Description
Paleo By Season presents a chef's approach to healthy Paleo cuisine by teaching home cooks the essential techniques for cooking any food, so they can focus not on recipes but on using the best fresh, local ingredients. With dozens of techniques, over 100 Paleo recipes, and a showcase of small farmers and ranchers cross the country who are providing sustainably raised meats and organically grown fruits and vegetables, Paleo By Season offers home cooks the tools they need to think like a chef.

Paleo By Season presents a chef's approach to Paleo cuisine. From day one of culinary school, chefs are taught not to rely on recipes. Instead, they're trained in cooking methods, techniques, and flavor profiles that give them the skills to handle any ingredient, in any kitchen, anywhere in the world. And it's fresh, local ingredients that chefs care about most. Paleo By Season brings this approach to healthy, seasonal home cooking that follows paleo cuisine's emphasis on whole meats, fruits, and vegetables. It gives home cooks the tools they need to conquer any farmer's market or CSA box--no matter what ingredients they find, they'll have the skills to turn them into something delicious. Essential kitchen skills from roasting poultry to keeping your knife sharp to sautéing vegetables are all clearly explained and broken down into easy-to-follow steps.

Ok, you've got me curious! Please just ignore me if it is a sensitive issue, but different diets have always fascinated me. I've tried them all, not merely for weight loss but to find the healthiest diet for me. I finally feel that I have honed it to pretty close to optimal for my body and activity level. But of course the eyes, the brain and the stomach don't always agree!
