I plan to try making my own bread. Can anyone recommend a good proofing basket for a beginner? I already have a lame, but need a dough scraper.

Be like most bread bakers, just use a common ol' ceramic or plastic bowl or correct shaped similar container for wetter doughs that need support. Otherwise prove on a baking sheet ready for the oven. It helps to put it in a plastic bag.

After trying that for a while decide whether you actually need a fancy proofing basket (aka Bannetons), you likely won't so you'll have got away with free and there is not much cheaper than that.

Sell your lame to someone who thinks that they need one and sharpen one of your kitchen knives and use that.

For a bakers' scraper have a look in the paint and decorating section of a good hardware store and find something in metal that looks as if it will do the job. You will likely find these can be got in stainless steel too and with handles as well, plus ultra cheap cos they are just common old tools without a fancy name.

If (when?) you get sick of the lengthy bread baking process you may wish to put all the saved money towards a good breadmaker .

Like AnotherCat said, if you are starting now my sugestion is to try it a few times before buying any specific utensils, just in case you don’t like the result or find it is to much work, that way you don’t spend money and end with something you don’t use.

I had a bread machine and didn’t like the bread made in it, it was very different from the one baked in the oven so I sold it. I make the dough in the standing mixer and bake it in the oven.

I can’t recommend any of those but I make bread at home without using them, and I put the dough to rise in a round clear container with a lid, it helps to keep the dough protected from drafts and allows me to see how much it has risen without having to open the lid to peek. When it is time to shape the bread I tip the dough to the table and shape the bread and put it in the baking pan where I will bake it, I usually cook the bread in a loaf tin just because it is easier to cut the slices, I then put the tin in the oven to rise until it is time to bake it, my oven has a function for proofing dough and I usually use it.

For me the hardest bread to make is the mixed one, not sure how you call it, it is a mixture of several flours (rye, wheat, whole wheat, and several seeds) it sometimes comes out ok and others it is to compact, I keep trying and experimenting, someday I will get it right.
