Keep in mind that vulnerability to software jailbreak is of course software dependent. Now that they have patched all the currently know secuirty holes it is most likely that any new model will lack any that are known. So there is no known way at present to jailbreak current firmware on current devices without serial port access.

Only know way to jailbreak this firmware at this time is serial port approach.

Out of curiosity is there a way to uninstall jailbreak and go back to stock firmware after following this guide?

Official being the update button through the kindle UI correct? Not using the downgraded links in the first post

A production firmware, yes, not a factory one. But it can be sideloaded.

It is interesting, but I do not want to open my kindle for the moment because it would stop supporting the ip68, although I do not plan to submerge, but it is always good that it is.
On the other hand I consider changing the reader that is similar to the last Kindle Whitepapper (10th) but which is better, do you recommend me?
I am considering changing the reader to some other alternative, but I don't know if there is one.
I am interested in a reader who correctly visualizes pdf books or guides, epub and who has better options than kindle in general, I wonder if there is any alternative?
Kindle has a lot of display issues with pdf and font size, I have to be rotating the pdf orientation and it is annoying.
I have been able to read a lot of books and I am quite happy, but Amazon tech support is very unpleasant.

Decided to try and uninstall the jailbreak doing what the person above suggested but I'm stuck at the update button not working/showing any new updates and being grayed out, any advice?

So as of right now there's no way to actually revert back to stock firmware as it's broken? That's a shame

To have the button Update black you need to download the update bin-file to the PC and copy it to the usb-root of the device.

Is downloading any generation of the kindle paperwhite's update bin file safe? Trying to get to the highest stock firmware that still allows hacking A.K.A 5.12.2 (6th generation on the amazon website)
