Quinoa is as easy (or easier) than couscous or regular rice. Much easier than risotto. Then again, any of the plain grains are pretty easy, too.

Turning it into a salad with oil, vinegar, seasonings and other add-ins ups the ante a bit...

Now that ones a bit harder to fix ....

If you don't rinse well (or buy pre-rinsed; all flakes are pre-rinsed, as well), it can be very bitter. This is due to the saponin coating on the outside of the seeds (it's soapy and bitter tasting - keeps bugs from eating all the seeds, naturally).
