Since our conversation on this thread two or three months ago about quinoa, I had the opportunity to try it for what I suppose was the first (and still only) time.

Maybe it was just the dish that the quinoa was in or poor preparation by the cook, but I didn't really care for it. The quinoa that I ate had a kind of (maybe it was a) husk. It wasn't really tough, but it was just a little bit unpleasant to eat.

I'm sure that I'll be giving it another try one of these days, though. Sometimes first impressions can be misleading.

Gtrs, you will recall that my only experience with quinoa was Christmas dinner. I too found it to be (I suppose the word would be) a little bit crunchy. I suppose that we should think of it as a rice alternative rather than a rice substitute.

Quinoa is better in a dish with a lot of other stronger flavours, not as a replacement for a bowl of plain steamed rice. Try it in something like this salad. Rinse the dry quinoa really really well.

Doesn't sound like you cooked it long enough (or with enough water).

Should be well rinsed first (in a pot of water, rub the seeds around to help remove the saponin coating; pour off water and rinse again). Then cook until creamy (it's softer, by far, than cream of rice, if you get the quinoa flakes, which don't need rinsing; whole quinoa is also softer than rice - as it cooks, the seeds open and a little tail pops out of each one).

some quinoa i've bought seems to have some kind of husk, but i make sure not to buy that again. cooked right, it's fun and if you nail it, it has a little pop in your mouth like caviar. and it's very tasty. one brand i bought had directions that didn't use enough water - i've made lots of quinoa - so maybe that was the issue.

I was looking at a Quinoa Salad recipe earlier and they also mentioned that you can tell when it is done by watching for the little tails to pop out. If I remember correctly, some of the non-creamy colored ones take longer to cook, also (the red, mostly, is what we've tried besides the "standard" color).

FYI--the one time that I had quinoa was at an Applebee's about 2 months ago. I think that the dish may have been the first one that they have had with quinoa in it (an effort to have more dishes for the health-conscious?). Perhaps the chef had not quite learned how to prepare it.

I don't think that a recipe with quinoa will ever appear in a book entitled something like 100 Easy Recipes, except perhaps as a gag. As for me, in my personal cooking, I think that I'll use just the easy peasy couscous and be done with it.
