For eBooks (not periodicals or comics), it's worth it for Amazon to drop Mobi. It may get those with a really old Kindle to buy a new one.

If that does change I wonder whether Amazon would then add KF8 to the Kindle for iOS/Mac apps or whether they would just let it go since they have already moved on to KFX for published books. It is really only personal documents that suffer from the lack of KF8 support in those apps.

There is a court case that Apple is losing or has lost about browser competition on iOS. Something was on The Register.

I'd imagine KFX for bought from Amazon or KU, but maybe azw3 would somehow be supported if Sideloading works.

They effectively did years ago on KDP and now also on Send to Kindle.
No new content uploaded/sent to Amazon will be downloaded as mobi/kf7 unless you've a Kindle that only works with that. That costs nothing and won't affect anyone with newer Kindles, so what is there left to drop now that "Send to Kindle" has now joined KDP (years ago) in dropping mobi?

That's the thing. No Mobi should be downloaded for ANY Kindle. Amazon has not done away with Mobi and won't have done so until this happens. When publishers don't have to deal with making sure their eBooks work well enough in Mobi is when Mobi will truly be dead.

If someone owns an older Kindle that is still working and being used to read with then why would Amazon want to force them to stop using it? That would just create bad feelings and might prompt them to move to a competitor.

As far as I know the profit in the Kindle ecosystem comes from the sale of books, not Kindles. And a book delivered in old MOBI format sells for the same price as one in the latest KFX.

First I doubt whether many publishers give a thought to how their books look in MOBI these days. And in the rare cases where they get called out because a book is unreadable in MOBI it is better to have Amazon siding with its customers than with its suppliers.
