			Its 2:36 here right now. Getting ready for the family & friends swim and bbq afternoon. Rubbed a bunch of russet's w/olive oil, salted them, and will put in the oven while we're outside playing in a warm pool.......pool covers do their job! Amazing for a thin 'bubble wrap' type. We'll have bbq'd chicken, baked potatoes w/sour cream and chives (ugh.......just give me butter!) fresh fruit salad and some veggies. For desert.....a peach pie w/vanilla ice cream. Wanna join in? Side gate is open........bring your own towels.........   |

 Oh. I learned a really neat trick today, just goes to show you are never to old to learn. I had to bake 7 large russets. Knew the microwave wouldn't get them all done at the same time, and I don't care for them that way anyway. So, googled it, and found this neat hint. Pour a little olive oil in a dish. About the size of a 50 cent piece. Dip the potato in.(cleaned and poked and dried, of course.) Now used your hands to rub it really good all over....sprinkle salt on it (they used coarse salt) and bake on middle rack at 350 degrees for about 1 1/2 hours. these were some really huge potatoes, so they cooked for 2 hours. Outstanding! Just like at a fancy restaurant........the peel tasted yummy! I suppose most all you know this already. Something so simple. Anyway, I lucked out on the fruit, it was all delicious.....watermelon, green grapes, strawberries, nectarines, Gala apples, bananas. The meal was great. Swimming was great. Weather was great. Company was great. Except you all weren't there. | |
