Processor is probably the Snapdragon 665. Here's why:
quick charge 3.0 is proprietary by Qualcomm, so snapdragons only.
It supports qc3.0, bluetooth 5.0 (but not 5.1), LPDDXR4.
It's octa-core with 2.0 GHz.

I think it's the only one with those exact properties. Moreover it's a little bit older just like the 625 was, and is widely used in Chinese products.

Other possibilities are (with qc4.0):
670, 675, 710, 712

The upcoming Onyx Boox Note 3 is going to be their flagship 10.3 inch E-note and ebook reader. It should have Android 10, Google Play, a front-lit display and color temperature system. It will have a faster processor, more RAM and internal storage than the second generation model. Exact specs and release date is unknown, primarily because it has just passed FCC certification.

I am looking forward to the Nova 3. Hopefully, this time around, it will be a device that works for me. I love the features, but the Nova Pro and Nova 2 always felt a little off, key features not working reliably etc. Maybe this time they have it figured out...

The 'Note 3' is now the renamed Note Air, due sometime next month. This is my opinion. Opinion are quite abundant, as my Drill Sergent was clear in stating over and over and over again.

That 10/28 date is the SECOND batch, I remember reading.

I'd like to think that. I'd like to buy the best Note immediately. But Goodereader is speaking as a vendor here. The Note Air link above, they're taking preorders at $479.99. The Note 3 link, they have set the price tag to $519.99, but it says "out of stock", so they plan to sell it, it seems.

It looks like they get the low-down from Onyx, as they're a reseller.

I would be even more wary about purchasing anything from them. They try to make it seem like they are actually shipping the products themselves when, in fact, it seems that they are merely passing customers' information along to the manufacturer and then taking a slice of the pie. I'd rather buy direct from Onyx or their Amazon store.

Goodereader has a very well earned negative reputation. Just look at how they treated many of their backers on their Indiegogo campaign which was unceremoniously shut down by Indiegogoin in response to many complaints.
