A cheap Pu erh of indeterminate vintage and type. My first, in fact. Tastes like... warm earth and leaf compost. In a good way. Very relaxing.

A nice Honyama Sencha from Gong Fu
My Gong Fu Order arrived yesterday: Camel's Breath, Blue Spring Oolong, Frozen Summit, Jin Xuan, Wuyi Shan Red Cape, Wuyi Shan Ti Kwan Yin, Organic Puerh Tuocha Honyama Sencha, Yuzu Sencha, Green Snail Spring I had the Green Snail Spring yesterday and found it boring. It is ok but nothing I would order again. It's description "This Green tea is from China's Garden City - Suzhou in Jiangsu Province. Suzhou is the perfect place for the connoisseur - of classic gardens, fine art, and because of the Green Snail Spring, fine teas. The earliest buds are plucked to produce tenderness and flavor. The resulting tea is phenomenal." I followed the brewing instructions and found that the tea was just flat, no real taste to it. The good news is that it is not off putting to me the way many Chinese Greens are. It just doesn't have a flavor similar to the Sencha and Bancha's that I enjoy. Waiting on my tea order from the Mache Tea Company: 2014 LAOCHA TUO RIPE, 2006 YUNHAI NANNUO AGED RAW, 2013 FT FEITAI 7572 RIPE, 2004 JIANSHEN TUO, 2014 YS MAN TANG HONG 3 RIPE, HUANGSHAN MAO FENG, ICCHA KARIBAN "Fragrant Flower" SENCHA, Genmai Sencha, KEEMUN MAO FENG, GUANGXI MAO FENG They are looking for a 2012 Pu-Erh brick for me. I want to have a few to give to little man when he turns 18, when he is married, and for me to drink on important days for him (like his birthday, graduation and the like). I love tea |

Oooh, I am seriously jealous. All those lovely new teas! I'm reminded of how knitters (myself included!) like to have a "stash" of yarn to always have a choice of projects / yarn to work with.
On China Greens -- play with temperature and steep a bit. I find somewhere around 180F works well, and not more than a couple of minutes of steep. If that's too bland, chances are it needs more leaves in the pot. But some China Greens need a bit more temp, and some a bit less or they're "grassy", which I don't like. (Japan Greens have the same problem - if you let the water get too hot, they go all grassy and bitter.) Starting out the day with Anniversary Breakfast Blend. |

I will add more leaves. I steeped it at 175 for 90 seconds, which is what the directions stated. I am using my One Touch team Maker so the water gets to temp, the basket lowers into the water and the basket raises up right at the 90 second mark. So I know water temp and timing are not off. I can try to add another scoop of leaves.
I like grassy, which is why Senchas are high on my list. I don't think I have bought a Bancha in a while but I have four Senchas in my cupboard. Working some Wuyi Shan Red Cape Oolong at work today. |
