			One thing I really want to try is grilled oysters wrapped in bacon on a stick.  When I saw the picture I instantly started to crave one.

			I can't remember if I already talked about this... when I go on Rendezvous I bring up a bunch of fresh oysters, grill them on the open fire, when they pop, schuck them the rest of the way then wrap them in bacon, put them back in the shell and on the fire to let the bacon cook.  you MUST use the good thick platter bacon or it will just get nasty

			I always do it on an open fire so it is kind of variable, but I would say about 15 minutes.  having the GOOD thick bacon is VERY important.  I have been thinking about doing a quick parboil on the bacon to get it partially done in the future.  that will be my next experiment

			I cook it all in the convection oven on cookie sheets lined with parchment paper. Then freeze it in plastic containers with wax paper between layers. That way we're not stuck with opened bacon packages in the fridge that spoil. Need bacon for a club sandwich? Open the container, take the number of strips required and thaw in the microwave. Voilà! It's the perfect way to take advantage of bacon sales without eating it at every meal... Of course there are those who would do that...   |
