Anyone here patient enough to make thrice-cooked chips? If so, how many hours total do your chips spend in the freezer? Have you tried making them with sweet potato or yam?

Have you taken a look at the recipes for a baked jacket potato vs. a baked potato? Did you notice the difference in cooking time and temperature (2 hours at 205° vs. 45-60 minutes at 220°)? Why do I have this sudden urge to watch a Food Network program as soon as the Canucks vs. Jets game is over?

Since I've had so many disappointments with undercooked french fries that I no longer want them and have gone with a bag of potato chips, would a triple-cooked chip be one that is completely cooked so I avoid the taste of raw potato?

I meant... are triple-cooked chips as different to their jacketed counterparts as regards variation in (national) preparation? Why wouldn't I be aware of the superior difference in the preparation for the British jacket spud?

Is it that the cooking process used for a triple cooked chip is less likely to have the uncooked center that is the bane of many a person looking to enjoy a chip/french fry? Is it not true that many places which are producing masses of chips/fries lack the temperature control and time to allow the cooking oil to reach it's proper temperature to allow cooking a chip/french fry so the outside is crispy and the inside is floury?
Did you know the cooking time for a .7x.7cm (length doesn't count) double-fried french fry is about 5-6 minutes at 150°, drain for 5 minutes and then ~5 minutes at 205° so 15-16 minutes compared to the multiple hours required for a triple-cooked chip? |
