Eavesdroppers must find a WPA2 encrypted Wi-Fi encapsulating any non-encrypted exchange such as VNC, in a direct connection. If the connection passed through non-encrypted segments than you would care to encapsulate in an encrypted tunnel such as SSH end-to-end. You do not strictly need to scramble the document if it is transported in a guarded van.
