Cover compression doesn't save
I think a found a bug, apparently when you compress the cover.jpg (looseless) and save the edited ebook, and re-edit it again you will see that the cover jpg compression is not saved (it has the same file size, you can even check it if you open the ebook path in explorer)

That is because by default all metadata including the cover is updated from the version in the calibre database when you open the editor. You can turn this offf if you prefer in the editor preferences under calibre integration.

All other images inside the ebook in the editor are correctly saves after compression -> that's because you can't mod them in Calibre (outside the editor)? |

The Editor allows that feature to be disabled. But if you use one of the other instances like (send to device), It will be done again FOR THE COPY |

Just adding that even Polish books compress is "fake" compressing the cover.jpg: it says it succesfully compressed the cover, but if you "Edit book" the cover.jps is reverted to previous size before the compression.

I even tried this, turning it off from the Editor preferences it compress the cover.jpg, but even if i embed the metadata and the cover again, as soon as i turn the option on again it restores the old uncompressed cover.jpg.
Apparently i can't find a way to keep the compressed cover, it's always reverted back |

I wonder if you're seeing some interaction with calibre and the Original Epub? I don't recall exactly what creates the Original Epub format and what calibre commands use it rather than the Epub.
