As far as I can tell, few ePub ebooks change the size and colour of illustrations and cover images from the original ePub unless they exceed the maximum size (for Kobo, that would be 5MB or 6000x6000 with a recommendation of a 3x4 aspect ratio). Currently, I find quite a few of my Kobo ePubs have gone to a 1800x2700 cover image

Whereas Amazon in their infinite wisdom will modify the resolution, colour and compression level of images (mostly cover images since few ebooks have that many illustrations. While this might be argued as allowing smaller files where a device capable of only 1072x1448 resolution in 16 glorious levels of grey does not get a 1600x2560 full colour image (Amazon's recommendation for cover images), it does not make sense on a file sent to the Android/Fire or iOS/iPadOS applications where even smaller images inside the ebook will be reduced in size and recompressed regardless of the very noticeable artifacts when even moderate zoom is applied.

And perhaps a better title would have been Amazon vs. ePub illustrations?

Most of my experience with this is with comic books rather than mixed text/illustrations, but I've seen different resolutions in the same kindle books depending on the download location. When they allowed downloads in the browser (for the transfer via USB option) those were different than the downloads in the kindle for PC app. The app downloads were lower resolution. I never had reason to copy from the Kindle to my PC, or from my ipad, but I wouldn't be shocked if those were different resolutions as well.
