Any way to add tags to the shortcut menu?
Calibre's epub editor has a useful feature where you can add/remove custom tags from the quick insert toolbar (I use div a lot, but it's not in the toolbar), but I don't see anywhere in Sigil that mimics that option. Maybe I'm blind. Would it be possible to add that in a future update?

See Clips chapter in the Sigil User manual. You can set them to insert any strings, tags and styles you want. And up to 40 of them can be assigned to icons on the toolbar and 20 of them can be assigned keyboard shortcuts as well. You can also have them wrap around selected text.
