Change "and" to "&" in Calibre

In severeal hundread titles two or more authors are listed as
"Peter Miller and Paul Shuster".
To get a clean Authors list (every author ist listed once), I want to change the word "and" to "&".
For the ecample the result is then: "Peter Miller & Paul Shuster".
After that I will change to surname, prename (like Miller, Peter)
I tested my own knowledge and searched the internet, but I can't get a solution. Is there anyone to help me?
Thank you in advance.

You should be able to make us of Bulk Metadata Edit Search and Replace.

Calibre should already be doing that. The default configuration will split a name at either of the words "and" or "with" or at an ampersand. This can be changed with the tweak "Splitting multiple author names". If you have changed that in the past, you can reset it in the configuration.

And I did check. I changed the author of a test book to "Peter Miller and Paul Shuster" and when I saved this, calibre showed the author as "Peter Miller & Paul Shuster".

For the current problems, @BetterRed's suggestion is the way to go.

Honestly, don't. If you are doing this for sorting, then let calibre do it. Calibre generates a "sort author" for use in the library. This defaults to "LN, FN". When you export the book, both are put into the metadata and different tools will use one or both of them. Changing the author like that tends to have flow-on effects that are a pain. If you want to display the sort author instead, you can create a custom column and hide the author column.

If you want to disable this behavior, go to Preference > Tweak > Splitting multiple author names
And replace the text by the following
Code:
# Splitting multiple author names

authors_split_regex = '(?i),?\\s+(zzzz)\\s+'

Possible cause of a fail, is the book language is set wrong
The and might not be the word used

Well, the tweak only has English Author separators . So that theory was a bust
