I'm pretty sure the answer to this is 'no', but here goes... Is there a way to block automatic firmware updates from Kobo?

With patches yes. You can block them outright or require they get your permission before updating. The latter is the least problematic as the former can cause issues if your device resets.

Disabling wifi should also work, provided you don't use it. Also make sure to avoid the Kobo desktop app.

THis means downloading any eBooks you buy from Kobo as ePub. But you can use the KoboTouchExtended driver with Calibre to send them to the Kobo as KePub is that's the format you prefer to read.
