How do I read side-to-side instead of up/down

My calibre is currently set to infinite scroll down through each book, while what I want is to flip the pages horizontally. How do I change this setting?

I'm not sure what you mean to flip the pages horizontally mean but it sounds as if you have calibre's viewer in flow mode. Right click in a page to open Configure book read, open Page layout and select Paged mode instead of Flow mode. You may also want to check your settings in Scrolling behavior.
