Definitively looks like AI. I read recently about another "cookbook" aimed at diabetics which a hospital had bought, meant to be used by its patients: https://bsky.app/profile/alexamarchi.../3kmxxsoj7ac2p . It sounds similar, with the "for beginners", 2000 recipes, and filled with nonsense.

It should be required by law to mark AI generated content clearly. Passing off a book made by AI as one made by people is fraud - just as much as if you were selling bread baked on sawdust instead of flour.
