Adding Columns to Polish Books

Is there any way that when I run the Polish Book, I can change the details of the columns that are used.

For example, when I open the Jacket.xhtml text file it currently shows the name, series, author and publisher, with the tags just under it.

I would like to delete the Publisher and add another column called classification?
