File names of ebooks & Calibre restart

First of all I would like to ask you to excuse me in advance of the strangeness of this post. It is explained by my lack of knowledge of the English language, ('m using Google Translate), for my lack of diligence on this forum and several problems on my Apple computers. Yet I was a recurring contributor to Calibre software and I intend to remain so.
I propose a list of problems I've encountered recently why I need your help as far as possible and your availability.

I'd like to rebuild the entire Calibre database from backups (hopefully find them), since due to different crashes of my computers Calibre opens on an empty database. All my long work on Calibre disappeared. (If the base is not recoverable with or without fusion of different bases, I would at least being able to reinject epub files I probably saved (I know that all my Metadata will be then dead) independently but see 2 of my list.)
Then I always had problems to my EPUB be appointed on the model [Author] - [Title] - [volume] in any case I'd start with [Author] regardless of Calibre records. Calibre he knows to where do I do it manually?
For several years now I try to create my own .epub files (without DRM from personal files or PDF myself, I admit to not being there actually succeeded even with the help of some other dedicated software, would you have references to offer me?
Is there is a solution to remove DRM on mac systems at these days?

Thank you in advance to devote a little time to guide me.
I ask it to avoid doing stupid things with Calibre I do not master in its entirety, even less integrated server function. Sincerely, Alain

Not entirely sure what you mean by this. I appreciate that it is difficult to communicate perfectly using Google Translate but I think you are referring to the filename the book is saved to when sending to device? If so, try a Filename Save template.
See: Preferences ==> Import/Export ==> Sending books to devices
French: Préférences ==> Importer/Exporter ==> Envoyer des livres vers des dispositifs
What format is it in now? PDF? DOCX? Handwritten on paper? Plain Text?
calibre has a builtin E-Book Editor, which can import DOCX. Sigil can be used as an alternative editor for fixing up an EPUB.

Point 2 is about the files (.ePub) inside the computer folder that use Calibre as its Library.
Point 3 all the formats !
Point 4: I'll read this later. But thanks got software that do this task.
