How do I delete ebooks from a Kindle Touch?

I'm very embarrassed to be posting this thread, but I'd rather ask than remain ignorant.

I have a Kindle Touch, bought about two years ago I think, which I only use occasionally. I've forgotten and can't work out how to delete books from the reader. There must be a way - how is it done?

Connect the Kindle with a USB cable to your computer and delete all files in the documents folder.

Long-press on the title of the book, and options will appear.

Long press the title.
Note if it is a book from Amazon, you will see remove from device.
If it is a side loaded book, you will get delete this book. On that one you will get a second pop-up asking if you are sure.
