Filename to File Tag and Setting File Dorectory
I name all of my ePub and PDF files in this format, the brackets are included)

As long as the PDFs have decent XMP metadata, calibre should be able to import the embedded metadata without having to rely on filename parsing.
Otherwise, you're stuck calibre can't import tags from the filename.
