You can use an ePub editor in order to add an image to your ePub. Popular ones are Sigil and Calibre, I personally recommend Calibre as it is being developed and maintained regularly.
Try to have an image size as small as possible to save space and so it wouldn't take forever for the electronic readers to load.

ePubs are based on HTML/CSS, if you want to edit your epub you need to learn those two.
It shouldn't take more than a couple of hours learning the basics to get your sorted. However, untill that time comes you can use this:

<p><img src="PATH_TO_YOUR_IMAGE"/></p>
<p>YOUR TEXT</p>

As for the easy solution, you could use Sigil, it has a book view edit mode so you can edit your book kind of like you edit your microsoft word documents.

If you expect it to have any detail at all I would think 300 would be minimum. You can display an image a different size that it really is and some eBook Readers will allow you to zoom this image for more detail however, others may not. A minimal reader has a 800 x 600 pixel screen so wrapping should be fine. Many readers these days have much higher resolution. A 300 px image might look small on a higher res screen. Check our wiki for all sorts of readers. A large pixel image will be rescaled to fit the screen but of course it makes the book bigger. Only you can decide on the tradeoffs for your book. A viewer such as Adobe Digital Editions will let you resize the window to see the effect on the image.

If you want to resize the image relative to the font size, use relative units. For instance:

You have to learn HTML to edit an ebook, you can't expect us to teach you HTML here...
Don't make a big dlea out of it, you can learn the basics within 2 hours read tops.

As for your question: you need to put that code where ever you want the Mnemosyne.bmp file (image) would appear.

Zooming is a function of the specific eBook Reader, not a feature of ePub standard. Some tablet apps do this.

The tablet I have now is 800 pixel wide, the next one will be 1600, is there a way to make sure that I won't have to redo all my books with images, because they'll look small, going from an 800 screen to an 1600 ?

You can make them higher resolution in the first place. They will be shrunk automatically on your old reader. You can also scale them to 100% width but smaller images may not look good stretched.
