Does Calibre keep track of the originally imported format?
When I import a book and convert it is there any way to tell at a later date which format was the original? This would be useful if I later decide to convert to a third format, using the original as the source would theoretically have less errors having gone through less conversions.

No, unfortunately not.
The closest you get is when you try and convert a book with the source and target set to the same format. In this case in the original is renamed with an extension of the form .original_fmt |

Check the timestamp on the format files. Which you can see in calibre by opening the edit metadata dialog and hovering your mouse over the format entries. Or press the O key which will open the book folder in your OS file manager.

I created a custom column that I use to track the original format of each book. I made it a list column that I've pre-populated with the format that I import most frequently.
