Personally, I think higher resolution screens make all the difference in the world. I've used both and wouldn't call it a gimmick until you get to densities the eye cannot distinguish.
Are you supposed to make phone calls with that? |

Not true. There's all the difference in the world between the 300+dpi of my iPad 3, and the 150-odd dpi of the older iPad 2. It makes a tremendous difference to the readability of the screen, especially for text, which the higher resolution makes it comfortable to read at a much smaller size.
