You'd probably get more help if you asked in the Calibre forum:

https://www.mobileread.com/forums/forumdisplay.php?f=166

But to answer your question, click on the "Title" at the top of the title column. Calibre will sort your books by book name. Click again for a reverse sort.

I'm not entirely sure what you're asking for -- sort within authors, sort on a different field, etc.?

The "Help" button at the top of the Calibre screen will get you to the online manual, but there is a forum here devoted to Calibre -- scroll down to the E-Book Software section.

EDIT: Like jgaiser said!

Calibre stores all ebooks in a specific file structure (by author then by title - it will not be changed, don't bother asking).

However, you can display and find your ebooks in any manner you like. You can change the order of the columns, hide columns, create custom columns and much more. If you can't do what you want with the list, you can probably do it with a custom search. All of this does require learning calibre though - which takes some effort. There are a lot of features in the program.
