Can ereaders download any PDF or just certain ones?

I am looking for an ereader that will allow me to read books (duh) along with knitting and crochet patterns. I know that if I get a tablet type one I can download PDFs of patterns as well as ebooks, but I dont need the additional functionality and prefer the e-ink (just based off of what I have looked at in a few stores).

So, is it possible or do I just need to suck it up and look at a tablet type device?

Any eReader can download PDF file format if they are free.
If your PDF are not free, then there is a concern, some eReaders (for example kindle) don't allow to buy from other store.

you can buy Kobo TM which is well priced and it has E inK technology at well

A PDF file is a digital representation of a printed page. Virtually all PDF files are formatted for a page which is much larger than that of a 5" or 6" eInk display. This results in a very unsatisfactory reading experience.

So basically while I might be able to see it - it doesnt guarantee that it will be easy to read or readable at all?
