Just got my PRS700. Which dictionary, if there's any, will work with this ereader?

Any non-scanned (image-less) PDF'd Dictionary eBook will work.

Cool... Where do I get this? Just normal ebookstore like the one Sony has?

Are you looking for a dictionary where you can, from another book, activate a lookup function and get the answer from the dictionary (for a word, or an expression?).

If you are, the Sony eBook readers do not have that possibility.

If you are looking for a dictionary that you can consult like a normal pBook one, then yes, any commercial one available in one of Sony’s reading formats will work.
