How to make an epub book from scratch?

I found what I need, so thanks for checking my post, but I'm good for the moment!

I've got a few books available for kindle, and I created all the files myself. I had a lot of help from people on this forum, and I started from file templates I found online.

So, not exactly from scratch, but I didn't use a file generator, (except kindle gen of course.)

I want to do the same with the epub versions of these books.

Can anyone point me to a step-by-step that describes the necessary files, and maybe to some pre-existing file templates I could use to get started?
