Template question(s)

Hi all,
years ago I created a custom column to host the book "subtitle"; now - for several reasons - I need to go back to the original complete title in the form "Title - Subtitle".

1. I created a temporary field with the template "{title}{#subtitle:| - |}" - no way though to have the hyphen surrounded by spaces, I always end up with "Title-Subtitle"
2. If I solve the previous issue (or if it cannot be solved ), how can I replace the original title of the book with the complete one resulting from the template, subsequently removing the subtitle field and the temporary one?
