Does KoboTouch need to be disabled when KoboTouchExtended is installed?

Also secondary question, it seems to be successfully converting the epub to kepub (at least according to the e-reader) but I'm not getting the detailed stats page after finishing a book. Percentage completed is available just not the detailed stats. Any way of fixing this?

It will take care of that.
There will also be a item on the Kobo icon to allow flipping to the other (and back)

I may be doing something wrong then as I never see a Kobo icon. Typically when I sideload to my Libra 2 through Calibre, I'll plug my device in then just right click the ebooks I want and hit send to device.

I see that only on Kobo Utilities, which has a menu item to switch between the standard kobo driver and the hobo extended driver, assuming it is installed.

Check the extension of your books on the reader. If Extended is enabled, it should end in .kepub.epub.

Note that some operating systems hide the extension by default so you may only see part of it.

Hmm... as @chaley said, that would assume that the OP has the Kobo Utilities plugin installed. While for me, it is one of the items I install when setting up a new calibre instance, it's not there out of the box.

All my sideloaded ebooks are kepub.epub so that's great. I'll give that Kobo Utilities and install and check it out. I've only been using Calibre a few months and in that time only really used it to transfer books to my ereader, honetly the plugin aspect frightens me a little, I'm constantly worried that I'll break something.

Still no clue why detailed stats are not showing. Is it possible that I'd need to convert the epub to epub3 then transfer to my device?

Plugins installed via the Get Plugins on the Calibre menu , are pretty solid (many users). If in doubt about an update, just (mostly) ignore the blue 'Update available' until you check in the Plugins thread.

I say mostly ignore, because oopsies happen (even to Kovid) and those need you to pay attention to not trigger the misbehavior or load the fix.
(what I am trying to say is there is no single response to updates. some fixes happen fast, others take time to find, And NOT ALL are the PI Authors fault. Calibre and Plugins are built on foundations that someone else made)
Check here at MR to see if there are issues, Report here if you are an very early adopter and see something odd (warns others). Then decide Wait or Now.

OH! And BACKUP before you do any BULK task on the Library
