I apologize if this has been asked & answered elsewhere, but I don't see it.

Font size seems to be a global parameter, i.e. when I change it for one book, it's changed in all books. Is it possible to set and save a specific font size for a specific book without affecting other books?

The reason for this is that while most books seem to play the game the same way, from time to time I find a book with a much smaller print size on the screen even though the font size is set to the same value. Since I always have multiple books I'm reading and I'm most comfortable with my default size, it's a minor PITA to be changing it back and forth.

Do it in the Conversion (start) dialog

Preferences is the default (used first time a book is converted)

I appreciate your getting back to me. Now however I'm really going to display my ignorance. I have over 300 books in my library but I have no idea what the conversion dialog is.

When I tell Calibre to add a new book it puts it into the library. I open it and it says it's the first read and then there it is. The font size is set to whatever I set it to the last time I changed it for any book. If I change it, it changes it for every book I open until I change again one any one of them.

Conversion dialog is what you see when you start to convert a book. It give you a chance to override the previously used or default, settings. (those used will be saved for later reuse on a PER BOOK, basis.

It sounds like the books have not been converted (not needing it)
It also sounds like you are using the built in VIEWER. I had assumed

this issue was on a device.
