Automatically remove font-family on conversion?

Is there a way to automatically remove any font-family on conversion. I basically don't want my chosen font overridden. I now have to use Tweak book command and do a regex search and replace, but if this can be done automatically that'd be great.

Maybe the user doesn't want to do this with every book, so a check box to "always use these options" would be very welcomed. Makes it possible to do batch conversion.

Calibre has Defaults (preferences: <conversion section> ) that are used (suggested) when you FIRST convert that title. After that, THAT title, remembers the setting used.

The Conversion Dialog gives you a chance to Override the default or saved choices

If you want this for All NEW book conversions:
Preferences: Common options: Look and feel

If you want to CLEAR all saved
Select books to do: Tap "E" (bulk mode MDE): tick the box shown

Question: I long ago ticked this option (to remove all fonts) when converting (epub to azw3), however I find that approximately 30% of the time there are still fonts in the file when I check the book with Edit Book...These book files have not been converted previously and I can eliminate these remaining fonts from within Edit Book. Because of these residual fonts, I have made checking for fonts after conversion with Edit Book part of my routine. Suggestions as to what I am doing wrong?

I have no idea. I don't USE that option. (I just answer the questions)

I suspect that the fonts were improperly declared (in the OPF) or CSS (@font-face). I wonder if it misses these for inline (per file) declaration?

The Debug step in edit book should have flagged issues about fonts.

After running convert with remove fonts ticked as above, I run Polish Books with Subset All Embedded Fonts ticked. This removes all fonts from the book.
